I know that a lot of souped-up cars have exhausts/mufflers that "enhance" the sound of the car by making it louder. How is it any different than just having a muffler fall off the car, though? Some of them sound just like that!

There is a difference, lol, but it takes a bit of being around them and listening to understand. An enhanced engine runs better and thus, sounds better, and an exhaust system that allows exhaust to leave more freely and not cause "back pressure" on the engine will give a car more power. It makes more noise, and while some like the noise, the main goal is usually more power.
