Default Engine Hesitation

I have a 2005 Chrysler Town and Country. When I get up around 45 MPH there is a slight hesitation in the engine. It only does this when the car is "cold", and doesn't give me issues after this. It is especially noticeable after a rain, or on humid days. Any ideas what could cause this?

I used to have this problem on my Grand Prix back in college and if I remember correctly it had something to do with the distributor. I can't tell you how many times I stalled out in the middle of an intersection on a rainy day. It really stinks.
